Growing up, my mum made our birthday cakes every year. I’m not talking a classic victoria sponge with a dusting of icing sugar (although, absolutely nothing wrong with that!), I’m talking about a whole miniature model of our 10th birthday party for one example; she made me and my twin sister out of fondant icing wearing the very outfits we wore that day, plus the buffet table we had at our party, the DJ booth and more. This was a tradition I wanted to continue with my own daughter, given I got my love for baking from my mum too.
So, for my daughter’s first birthday cake, I opted for a two tier, under the sea themed cake. Or I saw it online as “ONE-der the sea” for a play on words. I didn’t make it easy for myself, but I’m so incredibly happy and proud of the end result. But next year I’ll be sticking to just the one tier…
