Sugar cookies are my favourite thing to make and decorate right now. They’re super quick, easy and I can get as creative as I like with them too. Since making my sister’s baby shower cake and sugar cookies in May, I’ve been on a baking hiatus. But, to get back into the swing of things, I decided to make a batch of sugar cookies for my husband’s gaming day with his friends; hence the theme.
I ordered a Playstation cookie cutter and embosser set from Cookie Cutter Street and this was my first attempt at decorating biscuits using fondant instead of royal icing. I’ve got to say, using fondant/sugarpaste to decorate biscuits is so much easier; it’s quicker, cleaner, and saves your hands a lot of pain.

To start, I always use Jane’s Patisserie Sugar Cookies recipe. However, I add 30g extra flour and bake on a slightly lower temp for two minutes longer than the recipe states. It has required some trial and error to find what works for me, but this now gives me the perfect bake on all my sugar cookies. Using the cookie cutters, I cut out the amount of cookies I needed and freezed the remaining dough for another time.

Using the cookie cutters and embossers, I then cut out all the shapes I needed between the black and white fondant, then used the embosser to press the details in. Decorating this way was so much easier than I thought it’d be, but still fiddly and takes some planning to know what you need and where.
