Happy Pancake Day! Every Shrove Tuesday we’ve always made the effort to make pancakes from scratch in the evening after work, but the best few years since having my daughter, that’s not happened. But now, with a snack-obsessed toddler who loves a mini scotch pancake after nursery, I wanted to make the effort this year. I already shared my mini pancake stacks filled with Nutella and topped with fruit, but this time I’ve gone for a cupcake topped with a pancake…


I’ve gone super simple with these. I followed my favourite cupcake recipe by Jane’s Patisserie – you’re left with the softest sponge that taste sooo good! Then topped these with a simple vanilla buttercream followed by a mini pancake I made from my previous post, then stuck a few blueberries on top using more buttercream.
You could take it a step further by making actual blueberry cupcakes or muffins, then maybe a drizzle of maple syrup, but I wanted something simple when I made these!
